Savory Crepe Parcels

Ingredients for 3 people
2 1/2 cups of flour
7 eggs
2 cups of milk
1 stick butter, melted
1 1/4 cups of heavy cream
1/2 yellow bell pepper, diced
1/2 green bell pepper, diced
3 1/2 oz of chorizo, diced
1/2 log goat cheese
1/2 cup of spinach, minced
1/4 cup of ham, diced
1/2 onion, diced
2/3 cup of mozzarella, grated
salt & pepper

Step 1/3
Mix the flour and 4 eggs then stir in the milk and melted butter, season with salt and pepper. Cook 3 crepes.
Step 2/3
Place the crepes in the ramekins. Mix the remaining eggs with the heavy cream, add salt and pepper and then divide between the crepes.
Step 3/3
Place the diced peppers and chorizo in one of the crepes, the goat cheese and spinach in another, and the ham, chopped onion, and the grated mozzarella in the last one. Close the crepes, secure them with the toothpicks, and bake for 15 minutes at 350 °F. Remove from the oven, remove from the ramekins, and enjoy!
