Ingredients for 4 people

5 1/2 cups of flour

1/4 cup of yeast

1 3/5 cups of lukewarm water

1/2 cup of milk

2 tsp of olive oil

2 tbsp of salt

1 cup of ricotta cheese

1 lemon

1 tsp of spices

2 tbsp of olive oil

Black pepper

0.3 cup of tomato sauce

1 mozzarella ball

1 eggplant

1 zucchini

1 yellow bell pepper

1 red onion

Basil leaves


Step 1/2

5 1/2 cups of flour - 1/4 cup of yeast - 1 3/5 cups of lukewarm water - 1/2 cup of milk - 2 tsp of olive oil - 2 tbsp of salt

Combine flour, fresh yeast, lukewarm water, milk, 2 tsp of olive oil, salt, and knead the dough until homogeneous. Let the dough rise for 8 hours minimum, degas, and spread the dough in a circle.

1 cup of ricotta cheese - 1 lemon - 1 tsp of spices - 2 tbsp of olive oil - Black pepper - 0.3 cup of tomato sauce - 1 mozzarella ball - 1 eggplant - 1 zucchini - 1 yellow bell pepper - 1 red onion - Basil leaves

Mix ricotta, lemon zests, olive oil, season with black pepper and spices, and pipe the mixture all around the pizza. Fold the edges over, secure tightly, and spread the tomato sauce in the center. Grill the vegetables, and garnish the pizza with mozzarella, eggplant, zucchini, yellow bell pepper, and red onion. Bake in the oven at 420 °F. Pipe the rest of the ricotta on the pizza, add lemon zests and fresh basil leaves, serve, and enjoy!
