Peas & Burrata Crostini

"What better way to celebrate spring than with fresh and raw veggies? This recipe is so full of flavor and crunch that it'll become your new avocado toast."

Ingredients for 3 people
1 1/2 cups of fresh peas
1 burrata
10 slices of country bread
1 tbsp of olive oil
1 tsp of lemon zest
1 cloves of garlic
1/4 tsp of cumin
1/4 tsp of salt & pepper
1 tbsp of roasted piquillo peppers
2 pinches of sugar
Step 1/3
Toast your slices of bread for about 3 minutes.
Step 2/3
In a bowl, combine your fresh peas, the olive oil, lemon zest, a squeeze of lemon juice, cumin, finely grated garlic, piquillo peppers, salt and pepper, and two pinches of sugar.
Step 3/3
Slice open the burrata and spoon a tablespoon of cheese over your toasts. Then add a tablespoon of the pea salad on top of the cheese. Eat immediately and enoy!

Don't have piquillo peppers? You can substitute them with roasted red peppers.
