Loaded Pepper Pie

Ingredients for 3 people
1 puff pastry
2 yellow bell peppers
2 green bell peppers
2 red bell peppers
2 3/4 cups of sour cream
1 cup of ham, diced
7 eggs
1/2 cup of mozzarella, grated
chives
parsley
salt & pepper

Step 1/2
Place the dough in the loaf pan and cut the excess from edges. Dice one pepper of each color, then cut the tops off of the others and remove their seeds. Add 1 tablespoon of sour cream, 1/3 of the ham, and an egg to each hollowed out pepper and place them in the loaf pan.
Step 2/2
Mix the remaining eggs and sour cream with the grated mozzarella, diced peppers, parsley, chopped chives, salt, and pepper. Pour this mixture into the dish around the peppers, replace the tops of the peppers, and bake for 40 minutes at 350 °F. Remove from the oven, remove from the pan, slice, and enjoy!
