Step 1/2

Cut the puff pastry into a mermaid's tail shape. Spoon shredded chicken, cheddar and red pesto onto the pastry. Fold it to form the tail, ensuring the filling is well enclosed. Brush the puff pastry with egg wash and bake until golden brown.

Step 2/2

Use a small round cutter to cut circles from cheddar and mozzarella cheese. Arrange these cheese circles on the surface of the pastry to create a 'scale' pattern. Serve and enjoy!
