Summer Skewers
There are vegetables, it's practically a salad. 😉

Ingredients for 3 people
1 eggplant
1 zucchini
2 carrots
1 wheel reblochon cheese
1 1/2 tbsp of curry powder
3/4 cup of flour
3 egg yolks
3/4 cup of breadcrumbs
cherry tomatoes
basil
olive oil
vegetable oil

Mandoline (or vegetable peeler)

Step 1/3
Slice 8 strips from each vegetable and grill them with a drizzle of olive oil. Cut the reblochon cheese into 12 wedges. Wrap each piece of reblochon in 2 slices of vegetable.
Step 2/3
Mix the curry powder with the flour. Bread all the pieces of reblochon cheese by coating them in flour, followed by beaten egg yolks, and then breadcrumbs.
Step 3/3
Skewer 3 pieces of reblochon (1 of each vegetable) on 2 skewers and fry till golden. Serve the skewers with basil and cherry tomatoes.
