Mexcellent Jalapeño Fiesta!

Ingredients for 4 people
1/2 lb of 1/2 cooked shredded chicken
8 oz of cream cheese
1 tsp of salt
1/2 tsp of fresh ground black pepper
1/2 tsp of ground cumin
10 jalapeños
10 slices of bacon
2 pincées of pizza dough
3 tbsp of butter
2 cups of shredded cheddar
1/2 cup of refried beans
1/2 cup of sour cream
1/2 cup of guacamole
1/2 cup of tomato, diced
1/4 cup of sliced black olives
2 sliced green onions

Step 1/4
Preheat the oven to 375 degrees. In a large mixing bowl, combine the cream cheese, 1 cup of the shredded cheddar cheese, shredded chicken, and spices. Mix well. Put the cream cheese mixture into piping bag and fill each jalapeño with the mixture. Precook bacon for about 8 minutes. Once cool enough to handle, wrap each stuffed jalapeño with a slice of bacon. Set aside.
Step 2/4
Prepare the pizza dough. Roll each piece of dough out to about 16". Dust one of the pieces of dough lightly with flour. Place the second pizza dough on top of the first. Place the wrapped jalapeños around the outer part of the top dough. Cut incisions in the dough on each side of the jalapeño in order to wrap it. Make sure the dough cuts through both pieces of dough. Roll the bottom dough up into small cones. Use aluminium to create cone shape and place inside in order to maintain shape. Bake for about 8-10 minutes. Brush the dough with butter. Sprinkle the crust cones with a little cheddar and add 1/2 cup of the remaining shredded cheddar to the center of the dough. Bake for an additional 8-10 minutes.
Step 3/4
Remove the baked pizza from the oven. Remove the aluminum foil from the outer cones. Spread the refried beans over the melted cheddar, followed by the sour cream, guacamole, diced tomatoes, olives and green onions.

Break off the outer cones to scoop the center dip accompanied by the jalapeños. Enjoy!
