Fried Egg Sandwich
One simple trick to make the most amazing fried eggs :)

Ingredients for 3 people
3 slices of texas toast
2 1/3 cups of grated colby & monterey jack cheese
1 cup of roasted potatoes
6 slices of bacon
3 tbsp of caramelized onions
3 eggs
vegetable oil
2 tbsp of diced bacon
2 tbsp of diced tomatoes
chives
salt & pepper

Step 1/2
Create a hole in the center of the bread slice with your hands and press the soft part of the bread towards the crust to make a large hole in the center. Melt the grated cheese on the electric griddle in a rectangular shape and place the bread on one side of the cheese rectangle. Fill with roasted potatoes, 4 bacon half slices, and a spoonful of caramelized onions. Then wrap the melted cheese around the bread slice. Repeat with the other 2 slices of bread. Set aside.

Clean the eggs with water and vinegar, then place the eggs on top of the champagne flutes and cut a hole in each one with a knife. In a hot skillet, drizzle oil and pour the egg whites into the pan in 3 separate places. Quickly place the egg with the open-side down in the center of each white. Make a new hole in the top of each shell with a knife and add a pinch of bacon bits, diced tomatoes, chives, salt, and pepper in each shell. Serve the slices of bread on plates, place the eggs on top, and enjoy by dipping the bread in the eggs.
