Pineapple Surprise Dessert

Ingredients for 4 people
1 pineapple
1 cup of mascarpone cheese
30 g of powdered sugar
1/2 lime
8 ladyfinger cookies
pecans
Step 1/3
Remove the leaves of the pineapple without throwing them away then cut it in 2 on the lenght-wise. Empty one of the pineapple halves. Dice the removed flesh, keep the skin as a container and reserve the excess juice in a container. Mix the mascarpone, diced pineapple, powdered sugar and the zest of 1/2 a lime.

Place plastic wrap in the empty pineapple half. Break the cookies in half and dip them in the pineapple juice. Place the soaked cookies vertically along the sides of the fruit and fill the pineapple with layers of cream and cookies. Close the plastic wrap and place the pineapple in the refrigerator for 30 minutes.
Step 3/3
Unmould by removing the plastic wrap and turn the cake over. Arrange the pineapple leaves to recreate the shape of the fruit and then cover the cake with the remaining cream and pecans. Serve chilled.
