Gluten-Free Chicken Pizza
All the things we love about pizza minus the bread!

Ingredients for 4 people
4 chicken breasts
1 garlic clove
mozzarella string cheeses
4 tbsp of tomato sauce
1 cup of arugula
1 yellow tomato
1 green tomato
cherry tomatoes
1 onion
salt & pepper
1 red onion

Parchment paper
Rolling pin
Baking sheet
Step 1/3
Chop the chicken breasts and mix with the chopped garlic, salt, and pepper. Spread the chicken mixture on a lined baking sheet. Top with a second piece of parchment paper and roll the chicken out to create a circle.
Step 2/3
Place string cheese on the border of the pizza. Use the parchment paper to fold the chicken around the cheese to create a stuffed crust.
Step 3/3
Bake for 15 minutes at 375 °F. Cover with warm tomato sauce, garnish with the arugula, sliced tomatoes, and onion. Enjoy hot!
