Skinny Sweet Potato Frittata Cake
Dieting has never been so sweet :) For one person : only 360 calories!

Ingredients for 4 people
3 sweet potatos
4 slices of ham
6 eggs
4 cups of baby spinach
parsley
salt & pepper
Tools
Mandoline (or vegetable peeler)
Loaf pan
Parchment paper
Step 1/3
Cut the sweet potatoes into thin strips lengthwise with the mandoline, place them on a baking tray lined with parchment paper, salt, and bake for 15 minutes at 350 °F.
Step 2/3
Beat the eggs with chopped parsley, salt, and pepper. When the sweet potatoes come out of the oven, line the loaf pan with them, leaving them hanging over the sides. Place 2 slices of ham on the bottom of the dish, half of the spinach, and half of the beaten eggs.
Step 3/3
Add slices of sweet potato, ham, the remaining spinach, and the remaining eggs on top. Fold over the sweet potato slices to close the loaf and bake for 30 minutes at 350 °F. Remove from the oven, demold, and enjoy!
