Ingredients for 3 people
Green food coloring
3 1/2 oz of white chocolate
0.9 cup of egg whites
1 pineapple
4 tbsp of butter
Yellow food coloring
4/5 cup of heavy cream
2 cups of sugar
7 oz of mascarpone
Step 1/2
Make a Swiss meringue with the egg whites and sugar. Pipe it around the pineapple and bake for 1 hour at 210ยฐF.
Step 2/2
Dye some of the white chocolate with yellow food coloring. Coat the meringue with the yellow chocolate. Mix the heavy cream and mascarpone together. Garnish the inside of the meringue with cooked pineapple and mascarpone mixture. Dye the remaining white chocolate green and make pineapple leaves. Allow to set and place on top of the filled meringue. Refrigerate for 30 minutes. Serve and enjoy!
