In a skillet, cook the sausage and then transfer it to the oven at 350°F for 20 minutes to finish cooking. Take a bowl and fill it with mashed potatoes. Create a spiral shape in the mashed potatoes and sprinkle some espelette pepper on top. Place the cooked sausage in the spiral shape and set it aside.

Take small portions of mashed potatoes and form them into balls. Stuff each ball with a small piece of emmental cheese and shape it into a teardrop. Place the mashed potato teardrops on a baking sheet lined with parchment paper. Spray the teardrops with eggwash and sprinkle with parmesan cheese. Place the teardrops on top of the sausage dish, season with espelette pepper, and bake for 30 minutes at 350°F. Finally, sprinkle with parsley, serve, and enjoy!
