Cheese-Stuffed Chicken Breasts
With fried mashed potatoes!

Ingredients for 4 people
mozzarella
blue cheese
swiss cheese
white cheddar cheese
4 chicken breasts
flour, for breading
egg, for breading
breadcrumbs, for breading
1 lb of potatoes, boiled and peeled
2 eggs
3/4 cup of flour
3/4 cup of breadcrumbs
3/4 cup of cornstarch
salt & pepper
oil, for frying
ketchup, for serving

Piping bag or freezer bag
Step 1/3
Stack mozzarella, blue cheese, cheddar cheese, and Swiss cheese one on top of the other. Stick in 4 skewers and cut the cheese in half then in quarters. Slice the chicken breasts in half, then cover in parchment paper and flatten with rolling pin or meat tenderizer. Roll the flattened chicken breast around the skewer of cheese, repeat. Freeze until solid.
Step 2/3
Bread the chicken in flour, then eggs, then breadcrumbs. Fry in hot oil until chicken is cooked through.
Step 3/3
In a mixing bowl, add boiled potatoes 3/4 cup flour, cornstarch, breadcrumbs, salt and pepper. Mix until combined then place in a pipping bag. Squeeze the potato mix into hot oil to form coils. Fry until golden brown then serve with ketchup and the cheese-stuffed chicken.
