Ingredients for 8 people
4 cups of flour
4 tbsp of lard
2 tsp of baking powder
1 tsp of salt
1 1/2 cups of water
eggs
salsa
diced bacon
monterey jack cheese
gucamole
queso dip
pico de gallo
french fries

Step 1/3
Make the tortillas by whisking all of the dry ingredients in a together in a bowl. Add the lard and mix with your fingers until there is a sandy texture. Add the water and mix with your hands. Knead the dough for 5 minutes and leave to rest for 30 minutes. Divide the dough into 12 equal pieces and roll them into balls.
Step 2/3
On a well floured surface, roll the dough into thin rectangles — of press into a rectangle using two books to create a DIY tortilla press. Heat the griddle and cook one side of the tortilla. Break an egg on one end and roll the egg off onto the griddle. Brush with salsa, add chopped bacon, French fries and cheese. Fold into thirds and brush with salsa again.
Step 3/3
Place a smaller bowl inside of the larger bowl and fill the bowl with guacamole and chill. Turn the guacamole out onto a plate and place the burritos all around the guacamole, then remove the center bowl and fill with queso, dip the burritos in the cheese and guac!
