Flower Frittata

Ingredients for 4 people
4 potatoes
1/2 lb of ground beef
6 eggs
1 green pepper, chopped
1 red pepper, chopped
1 onion, chopped
olive oil
salt & pepper

Step 1/4
Cut the potatoes in half lengthwise and place them on the baking tray lined with parchment paper. Drizzle with olive oil, season with salt and pepper, and bake for 10 minutes at 350 °F.
Step 2/4
Remove the potatoes from the oven, scoop out the flesh, and set aside. Divide the ground beef among the hollowed out potatoes, season with salt and pepper, and cook for 5 minutes, meat side down, in a frying pan with a drizzle of olive oil.
Step 3/4
Mix the eggs, chopped peppers and onion, potato flesh, salt, and pepper and pour this mixture into the pan over the potatoes.
Step 4/4
Let cook for 5 minutes covered, turn the frittata over, continue cooking for 5 minutes covered, and enjoy!
