5 croissants
5 slices of smoked salmon
3 avocados
Paprika
1 celery
2 mushrooms
3 anise stars
1 carrot
1 onion
5 egg
Salt & pepper
0.4 cup of sour cream

Step 1/2
Cut out the center of a croissant using 1 avocado as a guide, garnish the center with smoked salmon, repeat the process with each croissant and arrange them on a plate forming a star. Roll up a slice of smoked salmon and place it in the center and set the plate aside. Cut the 2 avocados, pit them, lay out half the avocado, cut out the outlines of the avocado skin and place it on the avocado then sprinkle it with paprika. Remove the skin from the avocado and set it aside. Repeat the process to get 5.

Cut the celery, carrot, mushrooms and onion into pieces. Bring water to a boil, add the chopped vegetables, thyme, anise stars and simmer to obtain a vegetable broth. Cook the eggs with a double broiler in the vegetable broth, add salt and pepper. Place the sour cream in a ziplock bag and cut off the bottom corner. Arrange the eggs on each croissant, place the half-avocados, pipe dots of sour cream on each avocado. Sprinkle with chives and enjoy!
