Chili Relleno Burrito Ring

Ingredients for 6 people
7 peppers, ideally poblano
monterey jack cheese
flour, for breading
eggs, for breading
hot oil, for frying
14 flour tortillas
2 1/2 cups of grated monterey jack cheese
refried beans
mexican rice
pico de gallo
salsa (red and green)
1 springform pan
Step 1/3
Core peppers, fill with Monterey Jack cheese. Roll in flour, then roll in egg. Fry in hot oil until golden brown. Place on paper towels and set aside.
Step 2/3
Cover tortilla with shredded cheddar cheese. Place another tortilla on top. Cover second tortilla with refried beans, Mexican rice, and pico de gallo. Place fried pepper in the center. Roll the burrito. Repeat 6 more times.
Step 3/3
In a springform pan, place all 7 burritos standing up. Cover the top with cheese and bake for 10 minutes at 350 °F, or until cheese is melted. Pull apart and place in a ring around a bowl of salsa verde. Cover burritos with addition red and green salsa. Enjoy!
