Ingredients for 6 people
5 lbs of fingerling potatoes
salt & pepper
thyme
1 3/4 lb of roast beef
1 3/4 lb of chicken breast
bell peppers, 3 green and 3 red
3 onions
olive oil
herbs de provence
50 slices of bacon
30 slices of cheese

Step 1/4
Place the potatoes in the dish, and drizzle them with olive oil. Sprinkle with salt, pepper, and thyme, and bake for 30 minutes at 350° F.
Step 2/4
Dice the beef and chicken into 1-inch cubes, and cut the peppers and onions into 1-inch squares. Alternate and skewer the cooked potatoes, red pepper squares, onion squares and chicken cubes on 6 skewers. Do the same with the potatoes, green pepper squares, onion squares, and beef cubes on the remaining 6 skewers. Brush all skewers with olive oil, sprinkle with herbs de Provence, and grill in a pan.
Step 3/4
On parchment paper, form a large rectangle with half of the bacon slices, overlapping them slightly. Lay half of the cheese slices on top. Pile the beef skewers on one end and use the baking paper to roll the skewers up inside the sheet of bacon and cheese. Repeat with the chicken skewers.
Step 4/4
Place the 2 rolls of skewers on a baking sheet covered with parchment paper and bake for 15 minutes at 350 °F. Cut lengthwise to release the skewers and enjoy!
