Potato Bourguignon Nest! With a delicious red wine sauce 🥩🍷

Ingredients for 3 people
1 filet mignon
1 pinch of salt
4/5 cup of beef stock
3 potatoes
3 egg yolks
4 tbsp of flour
Parsley
Oil
2.1 cups of red wine
Thyme
Rosemary
Bay leaves
Step 1/2
Cut the filet mignon in 2 without going all the way, make a meat spiral and season with a pinch of salt. Cook the meat in the meat broth and repeat the process until you get 3. Cut the potatoes into strips and mix them with the egg yolks, flour and parsley.
Step 2/2
Fry the potatoes in hot oil and place them on a plate. Mix the red wine, thyme, rosemary, bay leaf and cook over low heat until reduced. Add the beef broth and pour the red wine sauce over the potatoes. Place the meat spirals on top, sprinkle with parsley, pour the red wine sauce on top and enjoy!
