2 Pound Scramble

Ingredients for 4 people
1 lb of cheddar cheese brick
4 flour tortillas
bacon
1 tbsp of butter
1/4 cup of onion, diced
1/4 cup of bell peppers, diced
4 eggs, beaten
salt & pepper
chives
hot sauce

Parchment paper
Baking sheet
Foil
Rubber spatula

Step 1/2
Carve out the center from the cheddar cheese brick, keep the center portion for later. Arrange the tortillas in a circle so that they are slightly overlapping. Fold the tortillas around the brick of cheese. Arrange strips of bacon in a large T shape on the parchment paper. Place the cheese brick in the center and, with the help of the parchment paper, lift and wrap the bacon around the cheese brick. Place on a baking sheet and bake for 30 mins at 350 °F. Fold the foil into a long strip long enough to wrap around the brick. Wrap the foil around the brick, tying a knot with the foil.

In a medium skillet, melt the butter, then add the onions and bell peppers. When soft, add the eggs and salt and pepper to taste. Using a rubber spatula, swirl the eggs around the skillet to scramble the eggs. Cut the leftover cheddar cheese into cubes. When the eggs are almost cooked, add the cheese and cook until melted. Add the scrambled eggs to the center of the cheese brick. Remove the foil. Sprinkle with chives and as much hot sauce as you like. Enjoy!
