Easy Veggie Burger
A date with healthy fast food!

Prep time: 20 minutes, Cook time: 15 minutes
Ingredients for 4 people
2 zucchini
1 potatoes
2 shallot
1 tbsp of flour
Salt & pepper
3 tbsp of olive oil
4 hamburger buns
2 onion
Lettuce
2 tbsp of mayonnaise
4 1/2 tbsp of parmesan

Step 1/5
2 zucchini - 1 potatoes - 2 shallot - 1 tbsp of flour - Salt & pepper
Wash and dry the zucchinis. Cut off the ends. Peel, wash and dry the potato. Using a coarse grater, grate the zucchini and potato. Peel and finely dice the shallots. Place the zucchini, potato, shallots, salt and pepper in a bowl. Add in the flour and mix well. Shape into 4 patties.

3 tbsp of olive oil
Heat olive oil in a large skillet. Cook the patties for 6-7 minutes on each side over medium heat. Set aside.

4 hamburger buns - 2 onion - Lettuce
Cut the burger buns in half, then toast them for a few moments. Dice the onions and chop the lettuce leaf.

2 tbsp of mayonnaise - 4 1/2 tbsp of parmesan
Assemble the burgers. On the bottom of each burger, spread some mayonnaise. Add the lettuce, a quarter of the onion, a zucchini patty and a quarter of the parmesan cheese. Cover with the top bun. Serve and enjoy!
